Our cloves are grown by our friend and partner Nihal Ellegals from Eko Land Produce, located in Wepatha, Digana outside Kandy. Here the cloves are handpicked, sorted and gently dried to a moisture content of 9 11%. This makes them extraordinarily aromatic and spicy with citrusy notes and a peppery, moderately sharp flavour. Use the cloves whole, and
